Cinnamon Pancake Bread 

Ingredients

  • 6 tbsp butter or margarine, room temp

  • 1/4  cup + 2 tablespoon castor sugar

  • 2 cups cake flour

  • 1/2 tsp bicarbonate of soda

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 2 large eggs

  • 1/4 cup buttermilk

  • 1/4 cup heavy cream

  • 2 tablespoon vegetable oil

  • 1/2 cup golden syrup or maple syrup

  • 1 tsp vanilla extract

 

For the Topping:

  • 3/4 cup cake flour

  • 1/4 cup castor sugar

  • 1/3 cup light brown sugar

  • 1/2 tsp ground cinnamon

  • 6 tablespoon butter, melted

 

To make the topping: combine all ingredients mix with a wooden / silicon spoon. Set aside.

For the Pancake bread

  1. In a bowl, combine all dry ingredients – flour, baking soda, baking powder and salt set a side.

  2. In a machine mixing bowl, cream the butter and sugar.

  3. Add in eggs, one at a time

  4. Add oil, buttermilk, maple syrup, heavy cream and vanilla.

  5. Pour the butter mixture into the dry ingredients and fold until incorporated.

  6. Pour the batter into a tin of choice

  7. Sprinkle the topping over the batter

  8. Bake at 180 C for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

  9. Serve warm. Enjoy!
