Cinnamon Pancake Bread
Ingredients

6 tbsp butter or margarine, room temp

1/4 cup + 2 tablespoon castor sugar

2 cups cake flour
-
1/2 tsp bicarbonate of soda

1/4 tsp baking powder
-
1/4 tsp salt
-
2 large eggs
-
1/4 cup buttermilk
-
1/4 cup heavy cream
-
2 tablespoon vegetable oil
-
1/2 cup golden syrup or maple syrup
-
1 tsp vanilla extract
For the Topping:
-
3/4 cup cake flour
-
1/4 cup castor sugar
-
1/3 cup light brown sugar
-
1/2 tsp ground cinnamon
-
6 tablespoon butter, melted
To make the topping: combine all ingredients mix with a wooden / silicon spoon. Set aside.
For the Pancake bread

In a bowl, combine all dry ingredients – flour, baking soda, baking powder and salt set a side.

In a machine mixing bowl, cream the butter and sugar.

Add in eggs, one at a time

Add oil, buttermilk, maple syrup, heavy cream and vanilla.

Pour the butter mixture into the dry ingredients and fold until incorporated.

Pour the batter into a tin of choice

Sprinkle the topping over the batter

Bake at 180 C for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
