Mousse is not cooked and the addition of air to the mixture leads to a fluffier consistency and lighter texture.  NO GELATIN USED!! 

Pasteurized eggs are essential and the pasteurization process does protect the public from dangerous food borne illnesses, most notably salmonellae. We will share the steps of pasteurization of eggs.

Mousse WITHOUT eggs or any holding agents such as gelatin, yet holds its texture well, perfect for small dessert bowls and as a ready to serve dessert
